On December 15th, our social committee is offering a turkey soup supper.  So I needed a turkey soup recipe.  I already had a turkey and wild rice recipe here but my wife said that turkey vegetable would be better.

I found this recipe via google search and it comes from food fanatic.

  • 1 teaspoon dried thyme

  • 3 cups turkey
  • 1 bag frozen mixed vegetables

Tex-Mex Chicken Soup

Despite the fact that we are going to have green Christmas for the first time in the twelve years that I have lived here, when it comes to winter I think of soup.  This recipe comes from the instant pot cookbook I found at Winner's while waiting for my wife.  It is a zesty take on traditional chicken soup that is fiery yet flavorful.

Ingredients:

  • 1 tbsp olive oil
  • 1/2 cup chopped yellow onion
  • 1 red bell better, seeded and diced
  • 1 poblano pepper, seeded and diced
  • 12 oz boneless, skinless chicken thighs
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 10 oz can diced tomatoes with green chilies
  • 3 cups chicken stock
  • 1 cup frozen corn kernels
  • 1 1/2 cups canned black beans, rinsed and drained
  • 1 cup fresh cilantro leaves
  • Lime wedges for serving

Directions:

  • Select Sauté and add olive oil to the inner pot.
  • Add onion, bell pepper, and poblano pepper and sauté for 2 - 3 minutes or until onions become soft and translucent.
  • Add the chicken thighs, salt and cayenne pepper, diced tomatoes, and chicken stock to the pot.
  • Cover, lock the lid, and flip the steam release handle to the sealing position.
  • Select pressure cook (high) and set cook time for 12 minutes.
  • When the cook time is complete, quick release the pressure.
  • Transfer the cooked chicken to a bowl and shred.
  • Return the shredded chicken to the pot and add corn and black beans.
  • Stir and leave the pot for 5 minutes for the corn and beans to heat through.

Crab And Shrimp Seafood Bisque

While it is true that seafood bisque are a delight, this delicacy is rather easy to make and its ingredients are ridiculously common.  In 30 minutes or less, you would be dishing out a pot of this goodness.  I found this recipe on Facebook but it was originally from Bestskinny.
To make enough bisque for 6 servings, you will need:

  • 2 1/2 cups milk.
  • 1/2 Tsp freshly ground black pepper.
  • 1 Tbsp tomato paste.
  • 1 cup heavy whipping cream.
  • 8 oz crab meat.
  • 4 - 8 oz small cooked shrimp.
  • 2 Tbsp sherry wine (or any white wine).

Directions:

  • Melt the butter over medium to low heat in a large saucepan a large saucepan.
  • Once melted add the celery and chopped green onion and then stir until they soften.
  • Blend the flour into the butter mix until it becomes homogenous, continue stirring and cooking for about 2 minutes.
  • While the flour-butter-vegetable mix cooks, warm the milk over medium heat in a different saucepan.
  • Slowly pour it into the flour-butter mix and continue stirring and cooking for about 3 minutes until it thickens (this mix is known as the roux).
  • Add the ground black pepper, tomato paste and whipping cream to the roux and continue to cook
  • Add the crab, shrimp and sherry wine to the soup and then stir lightly.
  • Reduce the heat and bring the soup to simmer.

Jambalaya Soup

My wife actually found this recipe on Pinterest.  It originally comes from Gimme Some Oven, which I, personally, think is a cool name.  As the author of Gimme Some Oven put it...this recipe “soupified” one of my favorite dishes.

  • 3 tablespoons olive oil, divided
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 pound Andouille sausage, thinly sliced into rounds

  • 1 (28 ounce) can crushed tomatoes
  • 1 cup uncooked white or brown rice
  • 2 tablespoons Cajun seasoning
  • 2 bay leaves
  • 1 teaspoon dried thyme, crushed
  • 1 pound raw shrimp, peeled and deveined

  • optional garnishes: chopped fresh parsley, thinly-sliced green onions, hot sauce

Directions:

  • Add the chicken and sausage, and sauté for 2-3 minutes, stirring occasionally.

  • Sprinkle the flour over the mixture, and stir to combine.
  • Continue cooking for 1 minute, stirring occasionally.

  • Continue cooking until the soup reaches a simmer.
  • Then reduce the heat to medium-low, and continue simmering the soup for 15 more minutes, being sure to stir the soup occasionally so that the rice doesn’t burn on the bottom of the pot, until the rice is cooked and tender.
  • Stir in the shrimp and continue cooking for 5 more minutes, or until the shrimp is cooked through.
  • Season the soup with salt and pepper to taste.
  • Then serve warm, topped with your desired garnishes

Slow Cooker Jambalaya

This recipe comes from Pinterest, via my wife who actually found it first.  Spicy and flavorful slow cooker jambalaya is instant family favorite comfort food you will fix again and again.  I have already made it twice in a week.

Ingredients:
  • 1 package andouille sausage
  • ½ pound uncooked shrimp (peeled and de-veined)
  • 1 large boneless skinless chicken breasts, pounded to even thickness
  • 3 bell peppers (one each of green, red, and yellow or orange), diced
  • 1 white or yellow onion, diced
  • 2-3 jalapeños (see note), seeds and stems removed
  • 1½ cups uncooked white rice
  • 2 cups low sodium chicken broth
  • 1 30-ounce can crushed tomatoes
  • 1 tablespoon minced garlic
  • 3 tablespoons cajun seasoning
  • ½ teaspoon each salt and pepper, or to taste
  • cilantro or parsley, for topping (optional)

Directions:
  • Slice sausage into sections (about ¼ inch thick slices).
  • Remove tails from shrimp (if they are still on).
  • Chop chicken into 1-inch pieces.
  • Add sausage, chicken, bell peppers, jalapeños, chicken broth, tomatoes, minced garlic, cajun seasoning, and salt and pepper to greased slow cooker and stir to combine.
  • Cover and cook for 3-4 hours on low.
  • Stir in rice and cook another 1-2 hours until rice is fully cooked and tender
  • About 20 minutes before serving, uncover slow cooker, stir in shrimp, re-cover and cook for another 15-20 minutes.
  • Stir contents of slow cooker, sprinkle with chopped cilantro or parsley if desired, and serve hot.

Notes:
Two jalapeños will not make this dish real spicy. If you want more of a kick I recommend adding a third jalapeño.
I made it with no jalapeños and found it spicy enough
