Mango Salsa

This recipe is from the recipe-a-day calendar that my wife bought me.  This one is from February 6, 2018.

Ingredients:
  • 2 ripe mangos
  • 1/4 large red onion
  • 2 Tbsp. cilantro
  • 1/2 jalapeno pepper
  • 1 lime
  • Kosher salt

Directions:
  • Cut the mangos into small cubes.
  • Finely mince red onion.
  • Chop cilantro.
  • Remove the seeds and ribs from the jalapeno pepper; then finely dice the pepper.
  • Juice the lime.
  • Mix mango, red onion, cilantro, jalapeno, lime juice, and 2 pinches of kosher salt.
  • Taste and adjust flavors as desired.
  • Let sit room temperature for about 15 minutes.
  • Serve with tortilla chips.
