Mexican Chicken Skillet

This one-pan chicken and rice recipe is a knock-out.  With 10 minutes of prep and one skillet to clean, you'll have more time to enjoy with the family.  As always... Kraft recipe, Kraft ingredients.

Ingredients:
  • 1 tsp. oil
  • 4 small boneless skinless chicken breasts (1 lb)
  • 1/4 cup Miracle Whip Original Spread
  • 1-1/2 cups instant white rice, uncooked
  • 1-1/2 cups chicken broth
  • 1 Tbsp. chili powder
  • 1/2 cup chopped tomatoes (about 1 medium)
  • 1/2 cup Cracker Barrel Shredded Old Cheddar Cheese
  • 1/4 cup cilantro

Directions:
  • Heat oil in large skillet on medium-high heat. 
  • Add chicken; cook 3 to 4 min. on each side or until cooked through.
  • Combine Miracle Whip, rice, broth and chili powder; pour into skillet around chicken breasts. 
  • Bring to boil; cover. 
  • Reduce heat to low; simmer 5 min.
  • Add tomatoes and cheese; cook, covered, an additional 2 min. or until cheese is melted. Sprinkle with cilantro.
