Jell-o Easter Eggs

I had planned on posting this last Friday, but I got hung up getting our condo ready (moving day draws closer and closer).  I found this on Facebook, where it originally comes from Delish.  It looked like a fun alternative to Easter Eggs.

Ingredients:
  • Cooking Spray
  • Food safe syringe
  • Plastic Easter Eggs
  • 1 package blue Jell-o
  • 1 package pink Jell-o
  • 1 package yellow Jell-o
  • 1 package green Jell-o
  • 1 cup cool whip (divided)

Directions:
  • Using a pair of scissors, make a small hole at the tip of each plastic egg.
  • Grease the inside of each egg with cooking spray.
  • In a medium bowl or measuring cup, combine Jell-o powder and 3/4 cup boiling water.
  • Whisk until powder is completely dissolved.
  • Add 1/2 cup cold water and 1/4 cup cool whip, whisk to combine.
  • Repeat process with remaining Jell-o flavors.
  • Place eggs hole side up in an empty egg carton.
  • Using syringe, fill each egg 1/3 of the way with one color.
  • Place in the refrigerator, for 45 minutes, to set.
  • Fill each egg another 1/3 of the way with another color.
  • Return to refrigerator, for 45 minutes more, to set.
  • Fill eggs the rest of the way with another color.
  • Return to refrigerator, for 1 hour more, to completely set.
  • Gently open plastic eggs to unmold Jell-o eggs.

Ham, Egg & Cheese Roll-Ups

I found this recipe on Facebook and it comes originally from delish.com.  I think it would make a great Sunday brunch, especially if company was coming.

Ingredients:
  • 10 eggs
  • 2 tsp garlic powder
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp butter
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup baby spinach
  • 1 cup chopped tomatoes
  • 20 slices ham

Directions:
  • Heat broiler.
  • In a large bowl, whisk eggs with garlic powder and season with salt and pepper.
  • In a large, nonstick skillet, over medium heat, melt butter.
  • Add eggs and scramble, stirring occasionally.
  • Stir in cheddar until melted, stir in spinach and tomatoes until combined.
  • On a cutting board place 2 slices of ham, top with a big spoonful of egg mixture and roll up.
  • Repeat with remaining ham and egg mixture.
  • Place roll-ups in a shallow baking dish and broil until ham is crispy.

Easy Pork Mole

Combine chocolate, coffee and spices to create a rich mole recipe.  This Easy Pork Mole recipe is great entrĂ©e for weeknights or busy weekends.  As always...Kraft recipe, Kraft ingredients.

Ingredients:
  • 1/4 cup Kraft Zesty Italian Dressing
  • 1 lb. pork tenderloin, cut into bite-size pieces
  • 1 yellow onion, chopped
  • 1 oz. Baker's Semi-Sweet Chocolate, chopped
  • 2 tsp. Maxwell House Instant Coffee Original Roast
  • 1/2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1 can chili-style diced tomatoes, undrained
  • 2 green onions, chopped
  • 2-2/3 cups hot cooked long-grain white rice

Directions:
  • Heat dressing in large saucepan on medium-high heat. 
  • Add meat and yellow onions; cook 10 min. or until meat is evenly browned and onions are crisp-tender, stirring occasionally.
  • Add next 4 ingredients; mix well.
  • Stir in tomatoes; simmer on low heat 15 min. or until meat is done, stirring occasionally. 
  • Top with green onions. 
  • Serve over rice.

Parmesan-Turkey Meatloaf

Meatloaf is always a fan favourite, but why not treat your taste buds to something different?  This easy-to-make meatloaf, flavoured with tomatoey ketchup, Parmesan cheese and Italian seasonings, is sure to become a few family favourite.  As always...Kraft recipe, Kraft ingredients.

Ingredients:
  • 1 cup Heinz Tomato Ketchup
  • 1/2 cup Kraft 100% Parmesan Light Grated Cheese
  • 2 Tbsp. tomato paste
  • 1-1/2 tsp dried basil leaves
  • 1-1/2 tsp dried oregano leaves
  • 1-1/2 lb. lean ground turkey
  • 1/2 cup fresh bread crumbs
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp. Lea & Perrins Worcestershire Sauce
  • 1 egg, beaten

Directions:
  • Heat oven to 350°F.
  • Mix ketchup, cheese, tomato paste, basil and oregano until blended.
  • Spoon half the ketchup mixture into large bowl. 
  • Add remaining ingredients; mix just until blended.
  • Press turkey mixture into 9x5-inch loaf pan sprayed with cooking spray; top with remaining ketchup mixture.
  • Bake 55 min. or until meatloaf is done

Smoky Deviled Eggs

Deviled eggs have always been a special party treat to me.  That is why I have as many versions of them in my recipes section as I do.  This recipe came from April 11 in my recipe-a-day calendar.

Ingredients:

  • 6 eggs
  • 1 shallot
  • 1/4 cup vegetable oil
  • 2 Tbsp. sundried tomatoes in oil, drained and chopped
  • 1/4 cup of mayonnaise
  • 1 1/2 tsp. smoked paprika
  • Kosher salt

Directions:

  • Hard boil eggs.
  • While eggs are cooking, thinly slice shallot into small rings.
  • In a small pan heat vegetable oil and cook shallots until golden brown, about 4 minutes.
  • Remove from the pan and place on paper towel  to cool.
  • Sprinkle with a bit of kosher salt.
  • When eggs are cooked, cooled, and peeled, slice them in half and scoop out the yolks.
  • Smash yolks with a fork.
  • Mix the tomatoes with the egg yolks, mayonnaise, paprika, and about 1/8 tsp. kosher salt (or to taste).
  • Spoon the mixture into the egg white halves.
  • Refrigerate until ready to serve.
  • Directly before serving, top each egg with a crispy shallot to garnish.

Beef Tips And Noodles

Enjoy the savoury taste of beef tips & noodles this evening.  You only need a handful of ingredients and half an hour to make this saucy beef and noodle recipe.  As always...Kraft recipe, Kraft ingredients.

Ingredients:
  • 3 cups egg noodles, uncooked
  • 1 Tbsp. oil
  • 1 lb. beef sirloin steak, cut into 1/2-inch pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can Heinz Beef Gravy
  • 2 Tbsp. Lea & Perrins Worcestershire Sauce

Directions:
  • Cook noodles as directed on package, omitting salt.
  • Meanwhile, heat oil in large skillet on medium heat. 
  • Add meat; cook 6 to 8 min. or until evenly browned, stirring frequently. 
  • Remove meat from skillet; set aside.
  • Add onions to skillet; cook and stir 4 to 5 min. or until softened. 
  • Add garlic; cook and stir 30 sec. 
  • Stir in gravy and Worcestershire sauce. 
  • Add meat; stir. 
  • Simmer on medium-low heat 2 to 3 min. or until heated through, stirring frequently.
  • Drain noodles; place on platter. 
  • Top with meat mixture.

Garlic And Chive Mashed Sweet Potatoes

This recipe from the calendar that my wife got me last Christmas.  This is a nice alternative to standard mashed potatoes.

Ingredients:
  • 6 garlic gloves
  • 1/2 cup milk
  • 1 1/2 pounds sweet potatoes
  • 1 1/2 pounds Yukon Gold potatoes
  • 2 tbsp chopped chives
  • 1 tbsp butter
  • 1/2 tsp kosher salt, plus more for cooking
  • Fresh ground black pepper

Directions:
  • In a small saucepan, place garlic and milk; heat over low heat while the potatoes cook, stirring occasionally (do not let boil).
  • Wash and dice potatoes and sweet potatoes (do not peel).
  • Place the potatoes in a large pot and cover with 3 - 4 inches of water; add a generous amount of kosher salt.
  • Bring to a boil, add the sweet potatoes after 5 minutes.
  • Boil 10 - 15 minutes until both are tender.
  • Drain and let steam dry.
  • Chop chives.
  • Remove the garlic gloves from the milk and discard the garlic.
  • In a large bowl, add potatoes, garlic-infused milk, butter, kosher salt, chopped chives, and fresh ground black pepper.
  • Mash the potatoes.
  • Serve immediately.

Note:
  • Instead of mashing by hand, mix on medium-low with a stand mixer or hand mixer until desired consistency is reached.
