Apple, Walnut, And Savoy Cabbage Salad

Another recipe from my recipe-a-day calendar.  This looks like a wonderful summer salad.

Ingredients:
  • 1/3 cup olive oil
  • 1/3 cup cider vinegar
  • 3 tbl. honey
  • 2 pinches kosher saly
  • Fresh ground black pepper
  • 1/2 cup walnuts
  • 1 head savoy cabbage
  • 2 apples
  • 1/2 cup percorino romano cheese

Directions:
  • For the dressing: whisk together olive oil, cider vinegar, honey, salt and pepper.
  • Thinly slice savoy cabbage.
  • Core 2 apples and chop them.
  • Using a vegetable peeler, shave 1/2 cup of romano cheese.
  • To serve, place cabbage on a serving plate, then top with apples, walnuts, cheese, and dressing.
