Southern Fried Salmon Patties

Today, I am feeling a little west coast, so I am posting a salmon recipe.  I found this recipe on Facebook.  While the recipe calls for canned salmon, my wife (who is from the west coast) has already told me that we have some "real" salmon in the freezer.

Ingredients:
  • 1 can salmon
  • 1/4 cup onion, finely chopped
  • 1/4 cup cornmeal
  • 1/4 cup flour
  • 1 egg
  • 3 tbsp. mayonnaise

Directions:
  • Open salmon and drain thoroughly.
  • Place drained salmon in a mixing bowl and break up evenly with a fork.
  • Add onion, cornmeal, flour, mayonnaise, and egg.
  • Stir until well blended.
  • Shape mixture into patties about the size of an average burger (or a little smaller).
  • Cook in oil in skillet over medium het until browned on each side.
  • turn once while frying.
