Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 lemon, sliced into wedges
- 1/4 cup extra-virgin olive oil
- 5 garlic clothes, minced
- 1/3 cup white cooking wine
- 1 1/2 tbsp. fresh oregano
- 1 tbsp. fresh parsley
- 1 tsp. fresh thyme
- 1 tbsp. lemon zest
- 2 tbsp. lemon juice
- Sea salt and pepper, to taste
Directions:
- Preheat oven to 425 degrees.
- Season chicken with salt and pepper on both sides.
- Place chicken in a baking dish.
- Place lemon wedges around chicken.
- In a small saucepan, heat olive oil until warm.
- Stir in minced garlic and stir for approximately 1 minute.
- Remove from heat and add white cooking wine, oregano, parsley, thyme, lemon zest, and lemon juice.
- Pour oil mixture over chicken.
- Place in preheated oven and bake for 25 minutes.
- Let rest for 5 minutes before serving
- Plate the chicken, spoon pout some of the drippings, and pour over chicken.
