Ingredients:
- 1 1/2 pounds small red potatoes
- 2 tbsp. olive oil
- 1 tbsp. garlic, finely minced
- 2 green onions, chopped
- 1 tsp. sea salt
- 2 tsp. rosemary, fresh or dried
Directions:
- Fill a stockpot with water , place over medium-high heat, and bring to a boil.
- While water is coming to a boil, cut the potatoes in half.
- Add potatoes to boiling water and boil until tender (approximately 10 - 12 minutes).
- Drain cooked potatoes, using a colander, then return to pot.
- Add olive oil, garlic, green onions, sea salt, and rosemary.
- Stir gently with a spatual until all ingredients are evenly coating potatoes.
