Ingredients:
- 4 zucchinis
- 4 Roma tomatoes
- 1 tsp. oregano
- 1 tsp. white vineger
- 8 tbsp. shredded mozzarella cheese, divided
- Sea salt and pepper
Directions:
- Preheat oven to 400 degrees.
- Cut zucchinis lengthwise, then use a spoon to remove centre seeds and create a trough to hold tomato filling.
- Prepare a baking sheet with foil and non-stick cooking spray.
- Place prepared zucchinis on baking sheet and season with salt and pepper.
- Place tomatoes in a small bowl.
- Stir in the oregano and vinegar until all ingredients are well combined.
- Fill each of the zucchini boats with the tomato mixture.
- Top each boat with 1 tablespoon of mozzarella cheese.
- Place in oven for 20 minutes or until cheese begins to brown.
- let cool for 5 minutes before serving.
