Baked Zucchini Boats

While my wife and I do not tend to host special occasions very often, we have done it.  This would make a great appetizer for a gathering at any time.

Ingredients:
  • 4 zucchinis
  • 4 Roma tomatoes
  • 1 tsp. oregano
  • 1 tsp. white vineger
  • 8 tbsp. shredded mozzarella cheese, divided
  • Sea salt and pepper

Directions:
  • Preheat oven to 400 degrees.
  • Cut zucchinis lengthwise, then use a spoon to remove centre seeds and create a trough to hold tomato filling.
  • Prepare a baking sheet with foil and non-stick cooking spray.
  • Place prepared zucchinis on baking sheet and season with salt and pepper.
  • Place tomatoes in a small bowl.
  • Stir in the oregano and vinegar until all ingredients are well combined.
  • Fill each of the zucchini boats with the tomato mixture.
  • Top each boat with 1 tablespoon of mozzarella cheese.
  • Place in oven for 20 minutes or until cheese begins to brown.
  • let cool for 5 minutes before serving.
