Ingredients:
- 4 medium sweet potatoes
- 1 tbsp. butter
- 3 garlic cloves, minced
- 2 tbsp. plain nonfat Greek yogurt
- 1/2 cup unsweetened almond milk
- Sea salt and black pepper to taste
Directions:
- Preheat oven to 425 degrees
- Wash sweet potatoes and wrap in foil.
- Bake sweet potatoes for 1 hour or until soft.
- Remove foil and skins and set sweet potatoes aside.
- Place a skillet on the stove over medium heat.
- Melt the butter.
- Add garlic and saute until garlic is golden.
- Add the sweet potatoes, yogurt and almond milk.
- Mash the sweet potatoes and combine ingredient until smooth.
- Add salt and pepper to taste.
