Garlic Sweet Potatoes

I am a potato lover.  It does not matter how they are prepared: mashed, scalloped, fries, or chips.  However, this recipe will make a healthier, tasty, alternative.

Ingredients:
  • 4 medium sweet potatoes
  • 1 tbsp. butter
  • 3 garlic cloves, minced
  • 2 tbsp. plain nonfat Greek yogurt
  • 1/2 cup unsweetened almond milk
  • Sea salt and black pepper to taste

Directions:
  • Preheat oven to 425 degrees
  • Wash sweet potatoes and wrap in foil.
  • Bake sweet potatoes for 1 hour or until soft.
  • Remove foil and skins and set sweet potatoes aside.
  • Place a skillet on the stove over medium heat.
  • Melt the butter.
  • Add garlic and saute until garlic is golden.
  • Add the sweet potatoes, yogurt and almond milk.
  • Mash the sweet potatoes and combine ingredient until smooth.
  • Add salt and pepper to taste.
