PB&J Granola

Once you make your own granola, you'll never go back to store-bought.   This version is peanutty and sweet, with strawberries and dried cherries.

Ingredients:
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup puffed brown rice cereal
  • 2 tbsp. flaxseed
  • 1/4 cup peanuts
  • Pinch of sea salt
  • 2 tbsp. extra-virgin olive oil
  • 2 tbsp. strawberry all-fruit spread
  • 2 tbsp. natural peanut butter
  • 1 tsp. pure vanilla extract
  • 1/4 cup dried tart cherries
Directions:
  • Heat the oven to 250 degrees.
  • In a large bowl, combine the oats, rice cereal, flaxseed, and salt.
  • In a small saucepan over medium heat, combine the oil, fruit spread, peanut butter, and vanilla.
  • Stir until combined and smooth.
  • Pour over the dry ingredients and toss together.
  • Spread the mixture in an even layer on a baking sheet and bake for 30 minutes, stirring every 10 minutes.
  • Let the granola cool to room temperature and stir in the dried cherries.
