Ingredients:
- 2 slices multigrain bread
- 1 clove garlic, halved
- 1 cup cherry tomatoes, halved
- 1 small cucumber, chopped
- 1/2 small red onion, halved and thinly sliced
- 1 yellow bell pepper, chopped
- 1/4 cup fresh basil, chopped
- 8 ounce boneless, skinless chicken breast
Directions:
- Heat grill to medium-high and spray grate with non-stick cooking spray.
- Grill the bread for 1 or 2 minutes.
- Remove the bread from the grill and rub each slice thoroughly with the garlic.
- Cube the bread and place it in a large bowl with the tomatoes, cucumber, onion, bell pepper, and basil.
- Grill chicken for about 15 minutes, turning once.
- Let it rest for 5 minutes then cut it into cubes.
- Toss the salad with a light vinaigrette.
