Shortcut Pierogies

Homemade pierogies?  The secret is using wonton wrappers and a delicious homemade creamy potato filling.  As always...Kraft recipe, Kraft ingredients.

Ingredients:
  • 1/2 cup Philadelphia Chive & Onion Cream Cheese Product
  • 2 cups cooled mashed potatoes
  • 1/4 tsp. pepper
  • 36 won ton wrappers
  • 1 egg white, lightly beaten
  • 3 Tbsp. butter, divided
  • 1/2 cup sour cream

Directions:
  • Bring large saucepan of water to boil. 
  • Meanwhile, mix cream cheese product, potatoes and pepper until blended.
  • Use biscuit cutter to cut each won ton wrapper into 3-inch round. 
  • Discard trimmings. 
  • Brush edges of rounds with egg white. 
  • Spoon 1 Tbsp. potato mixture onto centre of each round; fold in half. 
  • Press edges together to seal. 
  • Add pierogies, in batches of 12, to boiling water; cook 2 to 3 min. or until pierogies float to the surface. 
  • Drain in colander. 
  • Rinse with cold water; drain well.
  • Melt 1 Tbsp. butter in large nonstick skillet on medium heat. 
  • Add 12 pierogies; cook 2 to 3 min. on each side or until golden brown on both sides. 
  • Remove from skillet; cover to keep warm. 
  • Repeat with remaining butter and pierogies. 
  • Serve topped with sour cream.

Jambalaya Substituion

As we are getting closer to our vacation we are trying to clean the freezer out a bit.  So, last night, I made slow cooker jambalaya.  It let me use up 2 chicken breasts, a bag of shrimp, and the last of our farm fresh garlic sausage. 

However, I did not have the necessary can of crushed tomatoes, so I substituted a can of pasta sauce instead.  The jambalaya was still very good, my wife even managed two bowls, but it was a little on the juicy side.  So for supper tonight, we will be having jambalaya soup.

Taco Soup

All the flavors of tacos, in a steaming bowl of soup!   Serve up this savory soup with a side salad and cornbread for a quick lunch or dinner.  As always...Kraft recipe, Kraft ingredients.

Ingredients:
  • 1 lb. extra-lean ground beef
  • 1 onion, chopped
  • 2 cans (19 fl oz each) black beans, rinsed
  • 1 can (19 fl oz) diced tomatoes, undrained
  • 1 can (14 fl oz) tomato sauce
  • 1 cup frozen corn
  • 1 pkg. (35 g) taco seasoning mix
  • 2 cups water
  • 1 cup Cracker Barrel Shredded Light Tex Mex Cheese

Directions:
  • Brown meat with onions in large saucepan.
  • Stir in all remaining ingredients except cheese. 
  • Bring to boil; cover. 
  • Simmer on medium-low heat 5 min., stirring occasionally.
  • Serve topped with cheese.

All Shook Up

Today's post title has a double meaning.  First it is the name of the play we are going to see on Sunday, which will be my introduction to dinner theater (it is also my birthday celebration as we will be on the road on my actual birthday.)  Secondly, it is what my routine is after a week with my wife at home recovering from her surgery.

Revenge On The Fitted Sheet.

I have mentioned the ongoing war I have with fitted sheets before.  Today, while I may not have won the war, I have won the battle.  I realized how easy it is to differentiate between my nicely folded top sheet, and my badly folded fitted sheet and that sure makes making the bed much easier.
