Ingredients:
- 1 head cauliflower
- 4 garlic cloves
- 1 lemon
- 2 tsp. cumin
- 2 tsp. coriander
- 1 tsp. paprika
- 1/2 tsp. red pepper flakes
- 1/2 tsp. kosher salt
- 1 tbl. olive oil
- fresh ground pepper
Directions:
- Heat the oven to 450ºF.
- Chop the cauliflower into bite-sized florets.
- Mince garlic cloves.
- Zest lemon.
- Combine all ingredients in a large bowl.
- Line a baking sheet with parchment paper and spread the cauliflower mixture onto the sheet.
- Bake until tender, about 40 minutes, stirring occasionally.
- To serve, squeeze over fresh lemon juice.
