Spiced Roasted Cauliflower

An interesting side from my recipe-a- day calendar.  May even get me to eat my vegetables.

Ingredients:
  • 1 head cauliflower
  • 4 garlic cloves
  • 1 lemon
  • 2 tsp. cumin
  • 2 tsp. coriander
  • 1 tsp. paprika
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. kosher salt
  • 1 tbl. olive oil
  • fresh ground pepper

Directions:
  • Heat the oven to 450ºF.
  • Chop the cauliflower into bite-sized florets.
  • Mince garlic cloves.
  • Zest lemon.
  • Combine all ingredients in a large bowl.
  • Line a baking sheet with parchment paper and spread the cauliflower mixture onto the sheet.
  • Bake until tender, about 40 minutes, stirring occasionally.
  • To serve, squeeze over fresh lemon juice.
