An Old Family Favourite

Today's post is half recipe and half recollection.  As I walked the dog this morning, I looked up at the grey sky and felt the cool breeze.  I started thinking about what would be a comforting lunch on a day like this. Macaroni and Tomatoes.

As far as I know, I am the third generation that enjoys this simple meal.  The family myth is that it was created, at least for our family, out of need during the depression.  A cheap and tasty way for my Grandmother to feed the family.

One of my favourite family stories is the first time my Mother's parents came to dinner with my Father's parents.  My Father's mom served macaroni and tomatoes as the meal.  The story goes that my Mother's dad was looking around to see what the main course was that accompanied it.

Well enough reminiscing, time to get to the recipe.

Ingredients:
  • 1 cup macaroni
  • 1 can diced tomatoes
  • 4 cups water
  • 1 tsp. oil
  • Salt & Pepper to taste

Directions:
  • Place water in a saucepan.
  • Add oil
  • Bring to a boil
  • Add macaroni, cook until tender
  • Drain and hold macaroni in cullender
  • Place diced tomatoes in saucepan, cook until warm
  • Return macaroni to saucepan, mix
  • Salt and pepper to taste
  • Serve with bread (lots of bread)

Personal Note:  Who would have thought such a simple recipe would have so many steps.
