Last night it finally all came together. It has cooled down enough to cook and everybody was home for dinner. So I was finally able to put one of my recipes where my mouth is...and it was delicious.
I made Crispy Chicken Burrito Bundles and paired them with a "Fresh Express" Southwestern Kit. I was very impressed with this recipe and look forward to making it again in the future. In fact my wife and I both agreed it would make an excellent over the campfire meal when we are camping.
I did make a two changes to the recipe. One change to the ingredients and one to the directions. One that I think made it tastier, the other made it easier.
The recipe calls for chicken thighs, I used chicken breasts. I did not make the change because I thought it would make it better. I made the change because on the day we went shopping, Walmart did not have any chicken thighs available.
I also butterflied the breasts. Again, I did not make the change because I thought it would make it better. I made the change because nobody seemed to want to sell us a meat tenderizing mallet.
The recipe calls for preparing the bundle then rolling it in the shake & bake. I found it quite challenging to get a good coating on the chicken while trying to keep the bundle intact. So, after the first one, I pressed the outside of the chicken breast into the coating before I rolled up the bundle.
