McGriddle Muffins


Well my wife will tell me that I cannot eat these now but still thought I would share it anyway.  It is an easy breakfast to take on the go!  I found this recipe on Facebook but it comes from Recipe Flame.

Ingredients:
  • 1 pound ground sausage
  • 2 cups pancake mix
  • 1 1/2 cups water
  • 1/4 cup maple syrup
  • 1 cup shredded cheddar cheese
  • Cooking spray (for greasing muffin tins)

Directions:
  • Preheat the oven to 400 degrees fahrenheit.
  • In a skillet over medium heat, cook the ground sausage until it’s browned and cooked through.
  • Break it into small crumbles while cooking.
  • Once done, set aside.
  • In a mixing bowl, combine the pancake mix, water, maple syrup, and shredded cheese. 
  • Stir the ingredients until well combined, creating a thick batter.
  • Add the cooked sausage crumbles into the pancake batter. 
  • Gently fold the sausage into the batter until evenly distributed.
  • Lightly grease the muffin tins with cooking spray to prevent sticking.
  • Spoon the sausage and pancake batter mixture into the muffin tins, filling each cup about two-thirds full.
  • Place the muffin tins in the preheated oven and bake for 12-15 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  • Allow them to cool in the muffin tins for a few minutes before transferring them to a wire rack to cool completely.

They can be stored in an airtight container in the refrigerator and reheated as needed. 
Serve them with extra maple syrup, if desired.
