Well my wife will tell me that I cannot eat these now but still thought I would share it anyway. It is an easy breakfast to take on the go! I found this recipe on Facebook but it comes from Recipe Flame.
Ingredients:
- 1 pound ground sausage
- 2 cups pancake mix
- 1 1/2 cups water
- 1/4 cup maple syrup
- 1 cup shredded cheddar cheese
- Cooking spray (for greasing muffin tins)
Directions:
- Preheat the oven to 400 degrees fahrenheit.
- In a skillet over medium heat, cook the ground sausage until it’s browned and cooked through.
- Break it into small crumbles while cooking.
- Once done, set aside.
- In a mixing bowl, combine the pancake mix, water, maple syrup, and shredded cheese.
- Stir the ingredients until well combined, creating a thick batter.
- Add the cooked sausage crumbles into the pancake batter.
- Gently fold the sausage into the batter until evenly distributed.
- Lightly grease the muffin tins with cooking spray to prevent sticking.
- Spoon the sausage and pancake batter mixture into the muffin tins, filling each cup about two-thirds full.
- Place the muffin tins in the preheated oven and bake for 12-15 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow them to cool in the muffin tins for a few minutes before transferring them to a wire rack to cool completely.
They can be stored in an airtight container in the refrigerator and reheated as needed.
Serve them with extra maple syrup, if desired.
