Steamed Parmesan Green Beans

As summer starts to come to a close (at least around here) and the weather starts getting cooler, it is time to start thinking about Fall menus.  This will make an excellent side dish for our Thanksgiving dinner.

Ingredients:
  • 1 pound fresh green beans
  • 3 tbsp. olive oil
  • 2 tbsp. white wine vinegar
  • 2 garlic cloves, thinly sliced
  • 1/2 cup parmesan cheese
  • Salt and pepper to taste

Directions:
  • Wash and snap green beans.
  • Pour 2 inches of water into a large pot and boil.
  • Add green beans, in a steamer basket, let steam approximately 10 minutes.
  • While beans are steaming, mix together oil, vinegar, garlic, salt, and pepper in a bowl.
  • Once beans are done, add to mixture and toss using tongs to coat the beans.
  • Add parmesan cheese and toss lightly.
  • Cover and let rest for 5 - 10 minutes.
  • Remove garlic slices before serving.
