Ingredients:
- 2 large sweet potatoes, peeled and cut into French fry -sized strips
- 2 - 3 tbsp. corn starch
- 2 tbsp. olive oil
Directions:
- Place sweet potato strips in a bowl of cold water and let sit 1 - 6 hours.
- Preheat oven to 375 degrees
- Drain all of the water from the bowl.
- Prepare a baking sheet with parchment paper lightly sprayed with non-stick cooking spray.
- Place corn starch in a large Ziplock bag.
- Add the fries.
- Seal and shake to coat the fries.
- Place the fries on the baking sheet in a single layer.
- Drizzle with olive oil.
- Sprinkle a little sea salt and pepper (optional).
- Bake for 15 minutes, flip, and bake for another 20 minutes.
