This recipe is from the recipe-a-day calendar my wife gave me. It was the recipe from February 8, 2018.
Ingredients:
- 1/2 cup walnuts
- 1 cup very ripe banana (3 or 4)
- 1/2 cup butter
- 3/4 cup brown sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1/4 tsp. kosher salt
- 1 cup all-purpose flour
- 1/2 cup Dutch-process cocoa powder
Directions:
- Preheat oven to 350°F.
Butter a 9x5 inch loaf pan.- Chop walnuts.
- Mash bananas in a large bowl.
- Melt butter, then whisk it into the bananas along with brown sugar, egg, and vanilla abstract.
- Add baking soda, kosher salt, all-purpose flour, and cocoa powder and mix with a spoon.
- Pour the batter into the loaf pan and top with chopped walnuts.
- Bake 55 to 65 minutes.
- Cool in pan for 10 15 minutes; the run a knife around the edge and invert it onto a cooling rack.
- Serve warm or at room temperature.
