Chicken And Stuffing Casserole

Today's post is one of my favorite recipes.  It has become my potluck go to meal, and a very enjoyable Sunday supper.  However, I can not take all the credit, while I have put my own spin on the recipe, the original recipe is from the Manitoba Poultry Producers.

Ingredients:
  • 4 skinless, boneless chicken breasts - cut into strips
  • 1 onion - chopped
  • 3 cloves garlic - chopped
  • 2 cup medley of red, green and yellow peppers - cut into strips
  • 1  can condensed cream of chicken soup
  • 1/2 cup water
  • 1 1/2 cups shredded cheddar cheese
  • 1 package instant chicken stuffing mix 

Directions:
  • Saute onion, garlic, and peppers  in 1 tbsp of olive oil in fry plan. 
  • Add chicken strips and cook to until chicken is browned.
  • Layer cooked chicken and vegetables in the bottom of a 9 x 13 inch baking dish.
  • Sprinkle cheese on top of the chicken and vegetables
  • Cover with stuffing mix.
  • In a medium bowl, mix together cream of chicken soup and water; pour mixture over stuffing.
  • Bake at 350F for 45 minutes.


I intend to incorporate pork into this recipe by using boneless pork chops, cornbread stuffing mix, and cream of mushroom soup.
