Ingredients:
- 4 skinless, boneless chicken breasts - cut into strips
- 1 onion - chopped
- 3 cloves garlic - chopped
- 2 cup medley of red, green and yellow peppers - cut into strips
- 1 can condensed cream of chicken soup
- 1/2 cup water
- 1 1/2 cups shredded cheddar cheese
- 1 package instant chicken stuffing mix
Directions:
- Saute onion, garlic, and peppers in 1 tbsp of olive oil in fry plan.
- Add chicken strips and cook to until chicken is browned.
- Layer cooked chicken and vegetables in the bottom of a 9 x 13 inch baking dish.
- Sprinkle cheese on top of the chicken and vegetables
- Cover with stuffing mix.
- In a medium bowl, mix together cream of chicken soup and water; pour mixture over stuffing.
- Bake at 350F for 45 minutes.
I intend to incorporate pork into this recipe by using boneless pork chops, cornbread stuffing mix, and cream of mushroom soup.
